    What is activation?
    Most cereals are puffed or toasted under extreme heat or pressure, which destroys their nutrients. We prefer to make the most of our ingredients, so we activate them. Activation is the same as sprouting – soaking the seeds in filtered water to release the enzyme inhibitors, bringing the seeds to life. Enzyme inhibitors exist to keep the seed dormant as it waits for the right conditions to germinate. This means they also prevent the nutrients in the seed from being released into your body when you eat it. Activating makes it easier for the body to absorb the nutrients.

    Buckinis are made with Activated Sprouted Buckwheat to bring out the nutrients and for easier digestion. Buckwheat, despite its name, is not actually wheat. In fact it is not even a grain, it is a fruit. It belongs to the Achene family of fruits, which includes strawberries, sorrel, knotweed and rhubarb family.

    Buckwheat does not contain any gluten which makes it a great alternative for people with an intolerance for the stuff. It has a high protein content, has all essential amino acids and is especially high in Lysine, Tryptophan and Arginine.

    This is particularly important since the body cannot produce essential amino acids on its own and depends entirely on food sources to get them.

    Buckwheat alkalises our bodies, unlike other breakfast cereal bases such as oats, rice and wheat, which are acid forming in the body. Buckwheat is a rich source of protein, rutin and manganese.

    To activate buckwheat, we soak it, wash and rinse it, then dehydrate it at low temperatures (under 40°C). This allows for easier digestion and absorption of nutrients. This gives it a delicious crunch. This product is RAW, not cooked, to retain all its nutrients.

    Serving Suggestions:
    Great for breakfast or as a snack anytime - eat it straight as a trail mix or serve with your favourite milk and fresh fruits. You can also combine with other Loving Earth superfoods for added nutrition.
